One Bowl Chocolate Cake - by Martha Stewart

This one bowl chocolate cake recipe by Martha Stewart has seen me through all my kids birthdays. I have baked this cake year after year and we all still love it. The recipe has never let me down. It is moist and just chocolatey enough, just sweet enough and holds up well as cupcakes, rectangular cakes, bundt pan cakes...well anyway you bake it really!

Ingredients:
  • 1 1/2 cups unsweetened cocoa powder
  • 3 cups all purpose flour
  • 3 cups white sugar
  • 1 Tbsp baking soda
  • 1 1/2 tsp baking powder
  • 1 1/2 tsp salt
  • 3 large eggs
  • 1 1/2 cups buttermilk
  • 1 1/2 cups warm water
  • 3/4 cups grapeseed or canola oil
  • 1 1/2 tsp vanilla extract

Directions:

  1. Preheat oven to 350°
  2. Line cupcake pans with liners or butter two 8 x 2in round cake pans or 1 9 x 13in pan
  3. Sift cocoa, flour, baking soda and baking powder in a mixing bowl
  4. Add sugar and salt
  5. With the mixer on low, add the eggs, warm water, buttermilk, oil and vanilla
  6. Mix until smooth - about 3 minutes
  7. If you are making cupcakes - fill each cup with 1/3 cup batter and bake for 20-25 minutes
  8. Pour batter into prepared cake pans and bake in the middle of the oven for 30-40 minutes for cakes
  9. When done, remove from oven and let rest before turning out onto serving tray
Prep time: 30 minutes
Cook time : 25 minutes
Total time: 55 minutes

 

Simple Butter Icing:

Ingredients:

  • 1 pound unsalted butter - room temperature
  • 2 pounds sifted icing sugar
  • 1/2 cup milk
  • 1 Tbsp vanilla extract
  • 1 Tbsp fresh lemon juice

Directions:

  1. Beat butter with electric mixer until light and fluffy
  2. Beat in icing sugar 1 cup at a time until smooth
  3. Add milk, vanilla extract, salt and lemon juice
  4. Beat until smooth
  5. Refrigerate for one hour before using and then let it warm up a little at room temp before icing your cake or cupcakes

My well loved recipe!

 

 And here is an under the sea cake from years ago! I used graham cracker crumbs as sand and cut sour belts into seaweed. I found seashell candy forms at Michael's to make the seashells out of melted blue white chocolate. And of course the candy fish to finish it off!! Perfect for your next mermaid party!
